Duchess is Marsha's living sourdough culture. Her traditional Welsh lineage is said to reach back nearly 900 years, carrying a story of flour, water, time and careful stewardship.

Marsha has cared for and fed Duchess for years using premium imported organic flour and no commercial yeast. Students receive Duchess starter and learn how to keep the culture healthy at home.

A sourdough starter is more than an ingredient. It is a living culture that responds to care, temperature, food and time.
