Duchess is Marsha's living sourdough culture. Her traditional Welsh lineage is said to reach back nearly 900 years, connecting today's loaves with generations of naturally fermented baking.

Marsha has cared for and fed Duchess for years using premium imported organic flour and no commercial yeast. Workshop students receive Duchess starter and learn how to feed, maintain and bake with the culture at home.
