Duchess brings generations of bread tradition to the table

Duchess is Marsha's living sourdough culture. Her traditional Welsh lineage is said to reach back nearly 900 years, connecting today's bread with generations of naturally fermented baking.

Marsha has cared for and fed Duchess for years using premium imported organic flour and no commercial yeast. Students receive Duchess starter and learn how to maintain the culture in their own kitchens.

The workshop is not simply about following instructions. It is about learning how a living culture and dough respond to care, temperature and time.
